Chocolate Peanut Butter Fudge

WARNING: The food you are about to prepare is dangerously delicious (seriously).

I just made this all vegan fudge for my two good friends as a celebration of their engagement and good lord is it yummy! And mighty easy to make – all you’ll need is a blender and a freezer (and the ingredients of course).  For super smoothness, I recommend using a high-speed blender such as the Vitamix, but any blender will do. TIP: make sure all your ingredients are at least at room temperature to make your blender’s job easier. If your coconut oil is not liquid, melt it a bit. Continue reading

Apple Pie

I recently made this apple pie for two different holiday occasions and it was gobbled up quickly at both! A few people even insisted that I give them the recipe. It is quite simple an apple pie filling combined with a pecan crust. It’s really more of an open-face apple dish than an apple pie – but amazingly delicious none-the-less, and please don’t forget the (vegan) vanilla ice cream – it really makes it!

And just for fun, below the recipe I’ve included the lyrics to a song I composed last year called Apple Pie. I wrote this song for a Dixieland jazz band I play with called the Redhook Ramblers and our newest album which came out this year, Something More Sinister. good calories, bad calories

For the past few years, my sister has been touting something called “The Paleo Diet” which basically consists of meat, vegetables, small amounts of fresh fruits, roots, and nuts. We obviously disagree on the meat part since her diet is high in meat and mine is free of it (she often jokes that our diets are the same “except for the meat part”). However, recently I’m beginning to think that our views may not be so different after all. Gary Taubes’ book “Good Calories Bad Calories” has had a big impact on my sister. This book is based on the idea that what makes us fat is neither fat itself nor excess calories, but rather excess of refined sugars (white four, sugar, and easily digested starches) and their effect on our insulin- the hormone which apparently regulates fat accumulation.
